Squid grilled with lemongrass and chili

With a coastline of more than 3000 kilometers, Viet Nam's seafood resources are extremely rich in terms of variety. The making of seafood dishes is very creative. One of those creations is grilled squid with lemongrass and chili, which is a signature dish of fishermen in the central part of Viet Nam. It is grilled over a charcoal stove on the boats of fishermen just after catching.

Squid grilled with lemongrass and chili is incredibly flavourful.

Fresh squid is well-cleaned and cut into pieces. Then they are marinated with lemongrass, scallions, garlic, spices and seasoning powder for 30 minutes. They grill the squid over charcoal until they become tender. During the cooking process, the squid are flipped occasionally so that they can be cooked properly on both sides.

Grilled squid with lemongrass is best when served hot. The taste of fresh squid mixed with the spicy flavour of lemongrass and chili recalls the salty breezes from the ocean and creates a stunning aroma for the dish.
